Mmmmmm…muffins!

Now that Fall is in the air…well I suppose it’s more than just in the air…it is officially Fall! Needless to say, cooler air means my stove can return to full duty! Which means…baking!

Muffins can be a not so good treat (i.e. mega-sized cake style commercial muffins) BUT they can also be a handy & healthy, on-the run treat! Whether it’s a quick breakfast on the go or a hearty snack, muffins can be a great way to pack a lot of good, into a little package! These are some of my favorites–heart healthy flax, bran and packed with nutrition (carrots, apples, raisins and more)!

Bran Flax Muffins

Ingredients:

  • 1 ½ cups white flour
  • ¾ cup flaxseed meal
  • ¾ cup oat bran
  • 1 cup brown sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 ½ cups finely shredded carrots
  • 2 peeled and shredded apples (I usually leave the peel on!)
  • ½ cup raisins
  • ½ cup chopped nuts (optional)
  • ¾ cup soy milk or regular milk
  • 2 beaten eggs
  • 1 tsp vanilla
  • 2 Tbsp Vegetable oil

Directions:

  1. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. 
  2. Stir in carrots, apples, raisins and nuts (if desired). 
  3. Combine milk, beaten eggs, vanilla and oil.  Pour liquid ingredients into dry ingredients. 
  4. Stir until ingredients are moistened.  Do not over mix.  Fill muffin cups ¾ full. 
  5. Bake at 350F for 15-20 minutes.

Makes 15 muffins
