More Soup! Cheesy Potato Vegetable! Mmmmmm….

By now…you all know of my love affair with soup! It’s the perfect way to warm up on a gray & chilly day–not to mention a fabulous way to sneak lots of nutrition into a bowl!

Cheesy Potato Vegetable Soup

Ingredients:

  • 2tbsp butter
  • 1 large onion, chopped
  • 2 cups potato, cubed
  • 1-2 large carrots, sliced
  • 1/2 tsp salt
  • 1/2 tsp basil
  • 4 cups of broccoli OR cauliflower
  • 3 cups low sodium stock
  • 1 tbsp sugar
  • 1 cup skim milk
  • 1 cup grated cheese

Directions:

  1. Saute butter, onion, potato, carrots, salt & basil for about 4-5minutes. Add broccoli or cauliflower and saute for an additional minute.
  2. Add stock & simmer until vegetables are tender.
  3. Blend soup in food processor. Stir in milk, sugar & cheese!
