Happy Whole-Wheat Pancake Tuesday!

A great healthy twist on our favorite breakfast!
Ingredients:
- 1 1/3 cup whole wheat flour
- 3tbsp brown sugar
- 1tbsp baking powder
- 1tsp cinnamon
- ¼ tsp salt
- 1 ¼ cup 1% or skim milk
- 1 egg, beaten
- 3tbsp vegetable oil
- ½ tsp vanilla
- 1 cup berries (optional)
Directions:
- Combine flour, sugar, baking powder, cinnamon & salt in a large mixing bowl.
- In a separate bowl, beat together milk, egg, oil & vanilla. Add liquid ingredients to dry, mixing until almost smooth. Stir in berries (if using).
- Heat non-stick griddle or skillet over medium heat. Add ~1/4 cup of batter per pancake. Cook about 1.5-2min per side, or until golden.

150 calories, 3g fibre, 6g fat, 22g carbohydrate, 5g protein
