Treat of the moment= Microwave Protein “Muffins”

Oh man. I have a sweet tooth. For those of you who know me, I very much believe in moderation; however, at times we all need a little crack down.

When I’m refocusing on clean eating, I often still struggle with satisfying the sweet tooth without fully “turning it on!” (Which can result in a full-blown chocolate fest! Well not really…but with a fired up sweet tooth, it’s much harder to stay on track!)

Enter a night of blog reading where I find “Microwave Protein Muffins.” I’m intrigued. As always, I have to modify the recipe to make it slightly more “Dietitian” friendly….but here is round one. Stay tuned for new versions!

Ingredients:

  • 1tsp coconut oil (melt in mug using microwave first (3osec), to coat sides)
  • 2tbsp protein powder
  • 1tbsp spelt flour
  • 1tbsp applesauce
  • 1 egg white
  • 1/4 tsp baking powder
  • dash of sea salt

Method:

  1. Melt coconut oil in mug using microwave, about 30 seconds. Tip mug around to coat sides with oil.
  2. Combine remaining ingredients in mug and stir until smooth.
  3. Cook on high 2-3min (depending upon microwave).
  4. Remove from mug and enjoy! (I like a drizzle of almond butter and/or fresh fruit with mine!)

Nutrition analysis: 214cal, 5.3g fat, 2g fibre, 56mg sodium, 25.5g protein
